Six Week Raisin Bran Muffins

Recently I tried this new recipe. I have had it for a LONG time and just never made it...until now and I am SO glad that I did. My entire family likes these muffins, which is a rare thing for us to ALL like something that is cheap, healthy, and easy to make. So, needless to say, I am thrilled and will put this recipe into my "Regular" go-to recipe book.

This recipe was given to me from a dear friend that I met during my college years in Lynchburg, VA. Alice shared it with me and said that it was a recipe she always made. I have to laugh now thinking back to when I copied the recipe down...I didn't know ANYTHING about cooking or baking. She told me the recipe called for 5 tsp. of soda and I asked her "You mean like regular Coca Cola?" With that she laughed so hard and said you know Baking Soda. I said, "Oh. Yea." I had heard of Baking Soda but I guess never heard it shortened to just Soda.

Anyway, I was YOUNG and not so apt in the kitchen. Alice really taught me a LOT! She was an AMAZING woman...she was friendly, energetic, wise, funny, and so welcoming. Oh, and yes, she was 81 years old!! You see, I met Alice from my weekly visits to a nursing home. Alice went to the Nursing home EVERY DAY to sit with her husband, Aubrey. I loved going to the Nursing Home and I LOVED visiting with Aubrey and Alice. Aubrey was a character and really liked me. Alice and I hit it off and quickly became friends. I LOVED going to her house and listening to her tell me about her life experiences. We would meet for lunch, go shopping, and hang out at her house! I was BLESSED to have met her. She shared so much wisdom with me that I cherish still today.

This recipe came from Alice and every time I make it, I will think of her and the great example of a godly woman that she was.

Here is the recipe:

Ingredients -

1 15 0z Box of Raisin Bran Cereal
3 cups Sugar
5 cups Flour
5 tsp soda
1 qt. Buttermilk
1 cup Oil
4 Eggs
2 tsp Salt
2 tsp Melted Butter

Directions -

Combine 1/2 of the Buttermilk and Raisin Bran in a large Mixing Bowl. (let it soak for a few minutes). Then add the sugar, soda, salt, and flour and mix well. (Note: Use a BIG bowl, you will need the mixing room. And mix by hand.)

In another Bowl, beat together (with a mixer) the other 1/2 of the Buttermilk, eggs, oil, and melted butter. Then, add this mixture to your first Bowl.

Mix it good.

Bake it at 400 degrees for 15 minutes. (Makes 60 delicious muffins).

Batter keeps for 6 weeks in your refrigerator!

I made this recipe on Sunday and today is Thursday and we are down to only 10 muffins left!! We LOVE them and plus it was so nice having the batter on hand to whip up and give some Muffins away to friends and Mommom and Pappy!
